Pickled Cashew Recipe – Angelo’s 677 Prime

Pickled cashews, which are served as a bar snack at Angelo’s 677 Prime in Downtown Albany.

Pickled cashews at Angelo’s 677 Prime 
Makes about 1 gallon
3 pounds cashews
¾ cup light brown sugar
¾ cup granulated sugar
⅔ cup fish sauce
½ cup light soy sauce
2 tablespoons grated fresh ginger
4 teaspoons smashed garlic
1 medium Spanish onion, diced
⅓ cup sambal (see note)
5 teaspoons salt
2 cups rice wine vinegar
2 tablespoons black peppercorns
2 cinnamon sticks
8 bay leaves
1 cup sliced scallions
5 ½ cups water
